Harbison is a soft-ripened cheese inspired by French Vacherin. Vacherin is traditionally made with winter milk and the wheels are wrapped in strips of spruce bark. Jasper Hill Farm in Vermont makes Harbison year round and the spruce bark is harvested from the farm's woodlands. Made with pasteurized cow's milk, Harbison is woodsy and sweet with notes of lemon, mustard, and asparagus. Just cut the top off and dig in!
