Pantaleo is a unique and limited production aged goat's milk cheese from Sardegna, Italy. Production for Pantaleo started in the 1960's when goats were first introduced to the island of Sardegna. Made with milk from Capra Sarda goats, Pantaleo is aged for at least 100 days which helps scale down the "goatiness" of the milk. This cheese is robust and pleasing with a pronounced pistachio flavor profile and clean floral finish!
