Named after the trade winds that blow through the island of Fuerteventura. Alisios is 70% cows milk and 30% goats milk. The rind is rubbed with sweet pimenton from Murcia. Aged for 90 days with a smooth dense paste with toasted notes and a pleasant zing from the goats milk.
