Conservas Ortiz preserves their fresh anchovies (boquerones) using a totally traditional method and always following strict quality controls. Anchovies are filleted by hand, one by one, and marinated in wine vinegar. Once they have reached optimum maturity, they are packed in olive oil, garlic and parsley. Their unique, delicate flavor makes them ideal for serving dressed in balsamic vinegar and chopped onion, or salads.
